Banana Bread

1 3/4 Cup Flour

1 teaspoon baking soda

1/2 teaspoon salt

6 very ripe large bananas (2 1/4 pound), peeled

8 tablespoons of unsalted butter, melted and cooled

3/4 cup packed (5 1/4 ounces) light brown sugar

2 large eggs

1 teaspoon vanilla extract

2 teaspoons granulated sugar


Adjust oven rack to middle position and heat to 350 degrees.  Grease 8 1/2 by 4 1/2 inch loaf pan.  Whisk flour, baking soda, and salt together in large bowl.

Place 5 bananas (reserve one banana) in second microwave safe bowl, cover and and heat for about 5 minutes in microwave.  Let bananas drain in mesh strainer over medium bowl for 15 minutes, stirring occasionally.  Should omit about 1/2-3/4 cup liquid.

Transfer drained liquid to medium saucepan and cook over medium-high heat until reduced to 1/4 cup, about 5 minutes.  Return bananas to bowl.  Stir reduced liquid into bananas and mash until mostly smooth.  Wish in melted butter, brown sugar, eggs and vanilla.

Pour banana mixture into flour mixture and stir until just combined, with some streaks of flour remaining.  Transfer batter to prepared pan and smooth top.  Slice remaining banana on bias 1/4 inch thick and shingle down both sides of pan leaving center clear to ensure even rise.  Sprinkle granulated sugar over top.

Bake until skewer inserted in center comes out clean.  Bake take varies from 55 minutes - 1 1/4 hours.  Rotate pan half way through baking.  Let loaf cool in pan for 15 minutes, then turn out onto wire rack and let cool.
